My Favourite Christmas Spicy Nut Recipe. YUM!

Spicy Nuts

Preparation time: 10 minutes + cooling
Total cooking time: 20 minutes
Serves 6

2 tablespoons Olive Oil
1/2 teaspoon ground Cumin
1/2 teaspoon ground Coriander
1/2 teaspoon Garlic powder
1/4 teaspoon Chilli powder
1/4 teaspoon ground Ginger
1/4 teaspoon ground Cinnamon
2/3 cup (65g/2 1/4 oz) Pecans
2/3 cup (100g/3 1/2 oz) raw Cashews
1 1/2 cup (240g/7 1/2 oz) raw Almonds

Preheat the oven to slow 150oC (300oF/Gas 2).
Heat the oil over low heat in a pan and stir in the spices for 2 minutes, or until fragrant.
Remove from the heat, add the nuts and stir with a wooden spoon until the nuts are well coated.
Spread over a baking tray and bake for 15 minutes, or until golden.
Sprinkle with salt and cool.

I usually make up to a 10 quantity of this recipe and, after I have put some aside for Christmas day, I fill lovely Christmassy decorated jars to give to our guests ater we have finished our Christmas day celebrations. They are so polular that I always get asked if they can have a refill once their jars are empty! lol
